As a conventionally-trained dietitian, I couldn’t believe that a lower-carb, higher-fat approach like the Paleo diet could work. However, after having many of my clients fail at losing weight or controlling their diabetes and experiencing my own health struggles (read my story here) with the standard low-fat, whole grain approach, I knew there was something wrong. I decided to do my own research. I looked at the scientific studies and re-read my biochemistry textbooks and had no other choice but to come to the conclusion that the answer lies in eating real food.
