GAPS-Approved Intro Carrot Treat

Even if you are on the intro stage of the GAPS diet or SCD diet, you can enjoy this little carrot treat. The cinnamon is also good for you if you have SIBO (small intestinal bacterial overgrowth) because of its antibacterial properties.

I would sometimes prepare it the day before, with melted coconut oil and I would also add 1-2 raw egg yolks (from free-range eggs only). I would put it in the fridge overnight and it would make a perfect small and easy breakfast to grab on the go when in a hurry.

Carrots are usually well tolerated, but if they don't agree with you, try using butternut squash instead.

Here's what you'll need:

  • carrots
  • cinnamon
  • coconut oil

Here's what you need to do:

  1. Peel and roughly chop the carrots. Boil until soft. Let cool and puree in a food processor.
  2. Add cinnamon to taste.
  3. Serve warm with a dollop of coconut oil, ghee or butter! The carrot & cinnamon puree keeps well for a few days in the fridge.
