Paleo Mayo

Commercial mayonnaise is made with processed and refined pro-inflammatory omega-6 fats. The solution: make your own mayo using healthier oils!

If you use olive oil, use a light version because otherwise the taste will be too strong. Instead, you can also choose macadamia oil or avocado oil. Coconut oil can also work mixed half and half with another oil.

Use your healthy mayo to dip veggies, meat, fish or seafood, to prepare salad dressings or make deviled eggs.

Here is what you will need:
  • 1 cup of oil (olive oil, macadamia oil or avocado oil)
  • 1 whole egg
  • 1 tbsp. lemon juice
  • salt and pepper

Here's how to prepare your homemade Paleo mayo:

  1. Put all the ingredients and seasonings except for the oil in a blender (you can also use a hand blender).
  2. Add the oil slowly while mixing The oil should emulsify with the egg yolk (you should see it thickens).
  3. That's it... enjoy!
